peanut beef bundles
Makes 4 serving
2 TBS Soy sauce
2 TBS rice wine
2 tsp ginger juice
Salt
Pepper
1 lb Round steak, sliced into 1/4-inch wide strips
1/3 lb Crushed unsalted peanuts
4 TBS Corn starch
1 TBS water
3 Cups Peanut oil, for deep-frying
Lettuce leaves
Mix the first five ingredients
together. Marinade the sliced
steak in the seasoning liquid
for 15 minutes; drain
completely.
Heat 3 Cups peanut oil in wok
on high.
Combine the corn starch and
water. Dip the steak slices
into the 'batter' and then
'bread' with slices with a
crushed peanut coating.
Deep-fry the steak slices a
handful at a time. Drain on
paper towling and keep warm
until all the slices have been
deep-fried.
Serve the beef in individual
portions on lettuce leaves.]
