sunomono
The word sunomono in Japanese means 'things of vinegar' and pertains specifically to food items dressed with vinegar. The most common variety of sunomono served in Japanese restaurants is a sliced cucumber salad.
Makes 4-6 servings
1 large American cucumber
- or -
2-3 small Japanese cucumbers*
1 tsp Salt
2 Tbs Rice wine vinegar
1 Tbs Sugar
1 tsp Soy Sauce
(*Japanese cucumbers are a small, firm vegetable, and don't
need to be seeded.)
Cut the cucumber and seed,
then cut into very thin
slices. Sprinkle salt over
slices; let stand for 15
minutes. Rinse with water and
drain.
Combine the vinegar, sugar and
soy sauce in a bowl. Mix
well. Add the cucumber
slices. Mix, then portion out
into individual servings.
