spicy peanut vinaigrette
Makes 1/2 Cup
1/4 Cup Roasted peanuts, unsalted
3 Tbs Rice wine vinegar
2 tsp Soy sauce
1/4 tsp Hot chili oil
1/4 Cup Peanut oil
2 tsp Sesame oil
Chop the peanuts in a blender or food processor; set aside.
Combine the vinegar with the
soy sauce in a bowl. Whisk in
the oils until blended. Stir
in the chopped peanuts. Serve
over salad greens or with grilled
pork.
