chicken ramen salad

Another great summertime favorite ... perfect for a picnic or potluck.

Makes 6-8 servings

2 Cups Cabbage, chopped
3 Cups Chicken, cooked & cubed
1 Onion, sliced into thin strips
1/4 Cup Peanut oil
1 tsp Sesame oil
1 Tbs Sugar
3 Tbs Rice wine vinegar
1/2 tsp Pepper
1 pkg Ramen seasoning
1/2 Cup Slivered almonds, chopped
2 Tbs Toasted sesame seeds
1 pkg Ramen noodles

In a large salad bowl, add chopped cabbage; add thinly sliced onions and cubed cooked chicken. Toss well.

In a small bow, combine the peanut and sesame oils, sugar, vinegar, pepper, and ramen seasoning. Blend together thoroughly. Drizzle the dressing over the salad bowl contents. Refrigerate, overnight if possible, until served.

Before serving, top the salad mixture with chopped almonds, toasted sesame seeds, and crushed ramen noodles.
