chicken cashew curry
This is a stovetop recipe that takes about 40 minutes to prepare and cook.
Makes 4 servings
CURRY PASTE
2 Tbs Peanut oil
1 Small onion, chopped
1 tsp Coriander
4 Tbs Lemon grass, minced
2 tsp Garlic, finely chopped
2 tsp Turmeric
2 tsp Fresh ginger, grated
2 tsp Ground cumin
1/2 tsp Red Pepper
CHICKEN
1 Whole chicken
2 Cups Chicken stock
1 Cup Coconut milk
1 Cup Cashews
Salt to taste
In a food processor or blender, combine all the curry paste ingredients together and blend into a paste.
Debone and cut the chicken into bite-sized pieces. In a saucepan, combine the curry paste with the chicken
stock. Bring the mixture to a boil, then add the chicken.
Simmer for 30 minutes, then add the coconut milk and cashews. Simmer for an additional 10 minutes. Remove
from heat; add salt to taste.
Serve with cooked rice and fresh fruit.
