tofu stir-fry
with almonds
Makes 4 servings
4 Tbs Soy sauce
2 Tbs Honey
1/2 tsp Black pepper
1 lb Tofu, cut into squares
2 Tbs Peanut oil
1 Onion, finely chopped
2 Zucchini, cut into strips
2 Carrots, cut into strips
1 Cup Snow peas
1 tsp Fresh ginger, grated
1 Cup Slivered almonds
1/2 Cup Sesame seeds
Combine the soy sauce, honey, and pepper. Pour the sauce over the tofu until it is well coated.
Heat the oil, then sauté the vegetables and ginger for 5 minutes. Ina separate pan, toast the
almonds and sesame seeds. Mix the tofu with the vegetables and heat.
Sprinkle the mixture with the sesame seeds and almonds. Serve immediately.
