spicy spinach stir-fry
Makes 4 servings
1 lb Fresh or frozen spinach
2 Tbs Ghee
2 Tbs Peanut oil
2 Onions, sliced thin
2 Garlic cloves, minced
1 tsp Ginger, finely grated
1 tsp Cumin seeds
1/2 tsp Black cumin seeds
1/2 tsp Ground cumin
1/2 tsp Ground coriander
1/2 tsp Ground turmeric
1/4 tsp Chili powder
1 tsp Salt
Wash spinach well, if using
fresh spinach, and remove
tough stalks.
Heat the ghee in a large
skillet or wok. Stir-fry the
onion slices until browned.
Add the garlic and ginger;
stir-fry for a couple of
minutes.
Mix in the seeds, ground
spices and salt. Turn in the
spinach. Reduce heat and cook
uncovered until spinach is
cooked, stirring frequently
and adding enough water to
prevent the spinach from
sticking.
