rice wine mushrooms
Makes 4 servings
8 Shiitake mushrooms, dried
8 oz Straw mushrooms
8 oz Button mushrooms
1 Tbs Peanut oil
2 Tbs Garlic, minced
3 Tbs Rice wine
1/4 Lemon juice
Salt
Pepper
(Note: Fresh or dried mushrooms are
desireable, but canned mushrooms
are okay. If using canned mushrooms,
drain well before cooking.)
Soak the dried shiitake
mushrooms in a bowl of warm
water for 15 minutes. Drain.
Squeeze the mushrooms dry,
then slice into julienned
strips. Set aside.
Clean the fresh mushrooms with
a towel to remove any dirt.
Heat the peanut oil in a
medium-size skillet or wok
over high heat. Stir-fry the
garlic for 1 minute, then
quickly add the mushrooms,
rice wine, lemon juice, and
salt and pepper to taste.
Stir-fry over high heat for 5
minutes or until most of the
liquid has evaporated.
Serve immediately.
