katsuboshi dofu
(tofu with spring onions)
Wow! Something for lunch or dinner that's healthy and that doesn't need to be cooked.
Makes 4 servings
1 lb Tofu
1 tsp Ginger, finely grated
1/4 Cup Soy sauce
Coarsely chopped spring onion greens
Cut a 1 lb block of tofu in
half vertically, then halve
each section horizontally.
Cut each quarter portion into
equal size cubes-- you should
wind up with about 6 cubes per
portion.
In a small bowl or measuring
Cup, combine the grated ginger
and soy sauce. Stir to blend.
On a cutting board, chop the
green stalk of a spring onion
into 1/8-inch (or thinner)
slices.
Place a portion of tofu (6
cubes) attractively on a small
plate. Drizzle 1 Tbs of the
sauce over each portion and
then garnish with a pinch or
two of the spring onion
greens.
